Bean and Sausage Stew
Ingredients
2 Tbsp olive oil
1 large onion, chopped
1 package turkey kielbasa, sliced at half-inch thickness
4 garlic cloves, minced
15 oz pinto beans, drained and rinsed
15 oz white beans, drained and rinsed
15 oz black beans, drained and rinsed
3 cups vegetable stock
1 tsp dried oregano
1 bay leaf
1 Tbsp Frank's Red Hot
1/2 tsp ground black pepper
2 Tbsp tomato paste
Instructions
In a large cooking pot, heat oil over medium-high. Add chopped onion and saute until softened.
Add sausage and cook until browned.
Add garlic and stir a few minutes.
Add all beans and the stock and bring to a boil. Then reduce heat and simmer for 5 minutes.
Add oregano, bay leaf, salt, Frank's hot sauce, and black pepper. Stir. Simmer for another 10 minutes.
Stir in the tomato paste and cook until the stew is thick.
