Bean and Sausage Stew
Ingredients
- 2 Tbsp olive oil
- 1 large onion, chopped
- 1 package turkey kielbasa, sliced at half-inch thickness
- 4 garlic cloves, minced
- 15 oz pinto beans, drained and rinsed
- 15 oz white beans, drained and rinsed
- 15 oz black beans, drained and rinsed
- 3 cups vegetable stock
- 1 tsp dried oregano
- 1 bay leaf
- 1 Tbsp Frank's Red Hot
- 1/2 tsp ground black pepper
- 2 Tbsp tomato paste
Instructions
- In a large cooking pot, heat oil over medium-high. Add chopped onion and saute until softened.
- Add sausage and cook until browned.
- Add garlic and stir a few minutes.
- Add all beans and the stock and bring to a boil. Then reduce heat and simmer for 5 minutes.
- Add oregano, bay leaf, salt, Frank's hot sauce, and black pepper. Stir. Simmer for another 10 minutes.
- Stir in the tomato paste and cook until the stew is thick.
