Bean and Sausage Stew

  1. In a large cooking pot, heat oil over medium-high. Add chopped onion and saute until softened.
  2. Add sausage and cook until browned.
  3. Add garlic and stir a few minutes.
  4. Add all beans and the stock and bring to a boil. Then reduce heat and simmer for 5 minutes.
  5. Add oregano, bay leaf, salt, Frank's hot sauce, and black pepper. Stir. Simmer for another 10 minutes.
  6. Stir in the tomato paste and cook until the stew is thick.
